They don't have night vision, though they may see better than most people in the dark. As a general rule, if something isn't specified in the Job description, then the Job cannot do it (case in point, night vision). There are not more detailed versions of the Jobs, but if you want to see how Jobs traditionally work in the Final fantasy franchise, the wiki would be a good place to start; though of course you can ask the mods if you want specific details.
